Releasing BA Magwitch

The Magwitch will finally be free of it's shackles.  After barrel aging Magwitch for over four months it will be realeased in bottles during a limited realease party.  For those of you not familiar with the first release of the Magwitch IPA you should make plans to come down to the brew pub for some of the barrel aged version. Magwitch: 100% English Pale Malt, 100% East Kent Golding Hops.  This IPA was brewed and aged in oak barrels to replicate the flavors of an 1800’s style English IPA.   Massively hopped at 4.5lbs per bbl, this beer has multiple dry hops.  This beer is refreshing in its simplicity.  Light malt sweetness lends way to hops, fruity esters, and flavors from the oak, finishing dry.  On Saturday July 13th at 5pm from the brewpub we will have a limited release of this on a first come first serve basis. We will have bands, bbq, and beer! B.A. Magwitch will be on draft for those of you wanting to sample it as well as some other favorites. This will be a brewpub only release, similar to past release events. Details will be updated as they become available.

Mushroom Beer Tapping for Chicago Craft Beer Week

You all met our Assistant Brewer Bill last month when we tapped his Belgian Dubbel well he's back with his second brew a Mushroom beer!  What?! Mushroom? You only eat mushrooms on pizza.  No way says Bill this beer is made for drinking. He wanted to do something a little different this time around and this is not your average Abbey style beer.  The beer has a light malty body, a bit of sweetness and some fruity notes that come from the 45.5 lbs. of Hedgehog mushroom that were used.  Also, look for some spicy characters that play off of the Belgian yeast that was used.  For those of you not familiar with the Hedgehog mushroom it is edibile, with a sweet, nutty taste, and a crunchy texture.  No need to worry there are no floaties in this one!  Coming in with a 8.5% ABV and 23 IBU this just might be the summer Belgian you're looking for! Tapping will start at 5pm Monday May 20th for Mug Clubbers and 6pm for general public. Cheers!

All Aboard

We've bringing you something new this Monday a Euro-Hopped Belgian IPA, Hop Centraal. Rail cars of hops from Germany, Czech, and Slovenia meet in our Hop Centraal to add a spicy/herbal complexity to this Belgian Strong Ale. Brewed to showcase the flavors of a Belgian Trippel, this highly hopped Belgian IPA has a fuller body but still finishes dry coming in at 61 IBUs and 7.9% ABV. Across the world millions of people meet in the station to take a train to their destination.  Why don't you come on down to Flossmoor Station and ask your server to take you to Hop Centraal.  We'll be tapping this at 5pm for Mug Club Members and 6pm for general public.  Cheers!

Tapping Belgian Dubbel on Mon. 4/29

Bill is tapping his first production beer! Who's Bill you ask? Bill is Flossmoor's Assistant Brewer and he's brewing up some excellent specialty beers. Bill started as an avid homebrewer in 2006 which became a regular habit of his. Bill started hanging around Flossmoor on a regular basis which lead him into a job as Sales Rep with them. While doing Sales for the brewery Bill attended Siebel and got his Degree in brewing in early 2012 with the hope of moving into a brewing position. That dream became a reality when then Head Brewer, Nick Barron, moved on.  This allowed for a shift in positions and Bill became Flossmoor's newest Assistant Brewer. This brings us to now and the official release of Bill's first production beer, a Belgian Dubbel. This Belgian Dubbel is your typical Belgian style with rich complex flavors.  You might also taste the caramel notes and a hint of  raisin with the dry finish.  Bill wanted to makes this Belgian a bit more sessionable with an ABV of 7.5%.  This might be a bit high for some for a session beer but with the more dry finish it leaves you wanting another because of the lack cloying sweetness to it.  The release is set for Monday April 29 at 5pm for Mug Club Members and 6pm for the general public.  This will be a brewpub only release.  Look for more of Bill's brews in the future; possibly a 2nd barrel aged version of this..

Delasser Tapping Tonight!

Delasser, our Belgian Pale Ale will be tapped tonight at 6pm.  There will be a private tapping for Mug Club Members in the Pub room from 5-6pm.  We brewed Delasser, a low gravity Belgian Pale Ale to grow our new Belgian Schelde yeast culture.  We will be using the yeast from Delasser to brew higher alcohol Belgian beers.  The first of which will be a Belgian Dubbel, my assistant Bill's first commercial release!

Delasser is refreshing to drink and will quench your thirst as the warmth of spring arrives.  It's the perfect companion for relaxing outside on a sunny day.  The spice and fruit flavors characteristic of the Belgian Yeast Strain bring complexity to this beer while the low gravity and gentle malt sweetness make it easy to drink

Cheers!

St. Paddy's Day Food and Beer

It's that time of year again to make corned beef and cabbage and we've got the perfect beer to pair it with, our very own Buddy Holly Barley Wine.  We're not alone in thinking it's a great beer to pair it with either.  The guys and gals over at craftbeer.com agree. "Slow-cooked corned beef with cabbage and root vegetables is a true Irish-American tradition. Irish immigrants used corned beef instead of the usual bacon when they arrived in America.Corned beef gets it robust flavor from a plethora of spices including mustard seed, dill, coriander, allspice, black peppercorns, bay leaves and clove. The tangy cabbage and a salty, flavor-packed corned beef needs the distinct intensity of a barley wine so the beer doesn't get lost. The strong taste and heavy alcohol content of a barley wine cuts through the meat and is able to stand up to the array of spices and textures from this hearty dish."  Read the article here for more information on food and beer pairings for this St. Patty's Day http://www.craftbeer.com/beer-and-food/st-paddys-day-pairings  Sláinte!

Buddy Holly Barley Wine: Toffee, sweet and malty with an array of fruit notes and aged in oak barrels which contribute a subtle bourbon, vanilla and oak flavor 9% ABV

Magwitch IPA Tapping

Magwitch IPA will be tapped tonight at 6pm.  There will be a private tapping for Mug Club members from 5-6pm in the Pub Room.  We brewed Magwitch to be aged in barrels for a bottle release in July.  The beer on tap tonight is the beer we had left after filling 4 oak barrels.  There is only a small amount.  It will be on tap for a limited amount of time.

Magwitch IPA is a historic English IPA.  100% English Pale Malt and 100% East Kent Golding Hops.  We based the recipe off of recipes from the 1800s.  Hense the name Magwitch.  Magwitch is a character from Great Expectations, a Charles Dickens novel written in 1861.

The beer is refreshing in its simplicity.  The beers malt sweetness lends way to fruity esters and hops, finishing dry.   A fitting reminder of where America's most popular style came from!

Hope to see you in for a pint!

Barrel Aged Fireside Chat Release

The release for the barrel aged Fireside Chat will be this Saturday, Feb 23rd.  Tickets will be handed out at 10am.  There will be a 6 bottle limit.  $15 dollars/bottle.  Cash only.  The first 110 people will be guaranteed the limit.  We will also be serving barrel aged Fireside Chat on Draft.  $7 for an 8oz snifter or $3.75 for a 4 oz sample.

Fireside chat was 1st brewed as a homebrew by Mark Westmeyer on 12-27-2010.  The grist was made up of pilsner base malt extract, pale chocolate, crystal 40, and crystal 60 (and a pinch of Cara Brown).  The hop additions were Nugget for bittering, Centennial, Chinook, and Amarillo at the end of the boil.  See the picture below to see Mark's homebrew set up!

When we brewed Fireside Chat with Mark at Flossmoor Station on August, 1st, 2011 our grist bill was 990lbs of TF Optic 2-row, 55 lbs of TF Chocolate , 50 lbs of Briess C-40, 50 lbs of Briess C-60 and 50 lbs of Evaporated Cane Juice.  The hop additions we used were 352 oz of Nugget and 14.2 oz of Summit for bitterning and 176 oz of Centennial Type, Summit and Galena at Whirlpool.

We did two separte mashes and used the weak runnings from the first mash as our strike water for the second mash.  It was a long brew day but we hit our original gravity of 28 degrees plato!  We used a California ale strain to ferment and the finished beer ended up being 11.1% abv.  Instead of releasing an 11.1% American Barleywine in August, Nick and I decided to take what we needed to enter the beer in the Pro Am category at GABF and barrel age the remaining 11.0 bbls into oak barrels.  We racked out 4 oak barrels with Mark (6.8 US bbls) Feb 5th, exactly 5 months after it had been racked into barrels.  Each barrel tasted different.  We blended all four together and the result is the delicious!

Hope to see you at the release this Saturday!
